A Simple Side Dish: Pea and Almond Couscous

We often label summer as the season for quick and stress-free meals but really we need those meals in every season. Each week seems to have at least one busy day where the thought of making dinner has us cringing.

Even though I'm at home with my kids all day I still have days where nothing goes as planned, the kids have worn me out and the thought of getting in the kitchen makes me want to fall asleep on the spot. That's when I turn to simple foods that require as little effort on my part as possible.

A Smithfield Marinated Pork Loin is perfect on nights like those. Roasted in a 350º oven for 30 minutes, the only work you have to do is put it in. While it roasts you can whip up a quick side dish such as this Pea and Almond Couscous.

Couscous is often confused as a grain but it's really a pasta. It makes a quick and simple side dish because it's cooked just like instant rice. You boil liquid, stir in the couscous and let it sit until absorbed. It's also great for winter because it's filling, comforting and carb-laden.

Here I've added a few ingredients to basic couscous to make it a little more interesting and flavourful. The onion adds a punch of flavour, the almonds add a nice crunch and the peas add some fibre and a touch of spring, which I think we're all yearning for this time of year.

The best thing is that this dish can really be paired with any main as it's flavour profile is quite mild. Pair it with a Smithfield Peppercorn Garlic Pork Loin and you've got yourself a quick and simple meal to throw together after a long day. Dinner doesn't need to be complicated to be delicious.

Pea and Almond Couscous

  • 2 tablespoons butter
  • 1/2 onion, chopped
  • 1/2 cup sliced almonds
  • 3 cups chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups couscous
  • 1/2 cup frozen peas

Instructions

Cook onions and almonds in butter over medium heat in a medium sized saucepan until onions are soft. Add chicken broth, salt and pepper. Bring to a boil. Stir in couscous and peas. Cover and let sit for 10 minutes or until all of liquid is absorbed. Stir to combine.

Serves: 6
