
Smoked Sausage Quesadillas
Create a make-a-meal quesadilla salad by arranging quesadilla wedges on top of crisp salad greens tossed with purchased champagne or red wine vinaigrette. For the finishing touch, garnish with sour cream mixed with freshly ground black pepper.
Ingredients
- 1 lb. Smithfield Smoked Sausage
- 1 cup diced green pepper
- 1 cup diced onion
- 1 cup Monterey Jack cheese
- 2 teaspoons butter
- 1 tablespoon fresh chopped cilantro
- 1 pinch salt and pepper
- 6 flour tortillas
Steps
Preheat oven to 350 degrees F. Dice and cook smoked sausage in a sauteé pan. In a second pan add butter, green pepper and onion. Sauteé for about four minutes and then add the smoked sausage. Arrange the mix so that it is on half of each shell therefore dividing between the flour tortillas. Add the cilantro and the grated cheese. Fold each tortilla over to make a half-moon. Place the Quesadillas on a baking pan. Bake until they are crisp and golden about 5 min. Transfer to a cutting board cut into wedges and serve with salsa.
