
Smoked Sausage Sauté with Lemon Herb Vegetables and Pasta
Smithfield dinner sausage makes an ideal saute meat served with vegetables over spaghetti or fettuccini.
Ingredients
- 1 pkg. Smithfield Smoked Sausage cut in 1/2 -inch slices
- 1 pkg. (8 oz.) spaghetti
- 2 tablespoons olive oil
- 1 green pepper cut in 1/2 -inch pieces
- 1 yellow pepper cut in 1/2 -inch pieces
- 1 1/2 cups sliced zucchini
- 1 1/2 cups grape tomatoes cut in half
- 1/2 teaspoon garlic powder
- 1/2 cup chopped fresh parsley
- 1 teaspoon grated lemon zest
- 1 tablespoon lemon juice
- Salt and pepper
- Grated Parmesan cheese (optional)
- Fresh basil leaves (optional)
Steps
Prepare pasta according to package directions; drain and reserve 1/3 cup of cooking liquid. Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat; sauté sausage 3 minutes or until lightly browned. Add peppers; cook and stir 3 minutes. Add zucchini, tomatoes and garlic powder; cook and stir 3 minutes or until zucchini is crisp-tender. Remove from heat; stir in parsley. Place cooked and drained pasta in a large serving bowl; add sausage, vegetables, reserved pasta cooking liquid, lemon zest and juice; toss to combine. Season to taste with salt and pepper.
