Heat a sandwich press or a grill pan to medium hot. Making one sandwich at a time, spread half of the preserves on one side of one slice of bread. Top with half of the turkey. Spread half of the brie on one side of a second slice of bread and place it brie side down on the turkey. Place the sandwich on the sandwich press or grill and cook until golden brown and the cheese is melted - approximately 4 minutes. While the first sandwich is cooking, assemble the remaining sandwich in the same way.
NOTE: If using a grill pan, place the sandwich on the grill pan and top with an iron skillet that has a brick inside or a pot filled with water to give extra weight. Cook on one side until golden, flip, top with heavy skillet and cook until golden.
Serve alongside a crisp mixed green salad or your favorite homemade sweet potato chips.
