A simple, fresh salad for summer.

1/3 cup olive oil
3 tablespoons red wine vinegar
1/4 cup minced fresh cilantro
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 small red onion, vertically cut into thin slivers
8 cups peeled and cubed (1 inch), cold seedless watermelon
1/2 cup goat cheese crumbles
Whisk olive oil, vinegar, cilantro, salt, and pepper in a large bowl. Add onion, and toss. Cover and let stand 30 minutes. Add watermelon and goat cheese crumbles; toss well.
