Toasted Chipotle Honey Pork Tacos

Ingredients

2 lbs Smithfield Ground Pork

1 (16-ounce) jar chipotle flavored salsa

1/4 cup honey

2 Tbsp fresh cilantro, minced

1/4 cup water

1 tsp salt

1/2 tsp black pepper
-
3/4 cup crumbled queso fresco

10 each medium soft taco flour tortillas

2 cups green cabbage, shredded

1 (16-ounce) jar roasted red bell peppers, sliced strips, drained

2 each fresh avocado, peeled and chopped

1 (21-ounce) can seasoned black beans, warm
Steps
Heat a non-stick skillet over medium-high heat. Add Smithfield Ground Pork, brown for 6-8 minutes; drain excess fat and return to skillet. Add chipotle salsa, honey, cilantro, water and salt and pepper, reduce heat to medium and simmer for another 6-8 minutes or until liquid has reduced by half and pork begins to look slightly glazed. Remove from skillet. Clean skillet and return to medium heat.
Lay tortillas on a work surface, spread 1/2 cup of seasoned pork over one half of each tortilla, top with 2 tablespoons of queso fresco; fold over to form a half circle. Toast 2 tacos at a time in skillet for 45 seconds to 1 minute per side. Transfer tacos to a large family size platter, add cabbage, roasted peppers, avocado and black beans to the platter or in side bowls. Customize your own tacos and enjoy!
